The BRUT versions are born for our sparkling wines Prosecco “Selezione Terre Piane” and Sogno di Luna.
What could be better than a beautiful summer evening together with close friends and a glass of Prosecco in your hand?
Of course, it is with the arrival of the summer that bubbles have a unique and indisputable charm!
And so, in line with the market and wine-lovers requests, we decided to introduce in addition to our EXTRA DRY sparkling wines version, the BRUT one!
BRUT versions are characterized by an austere character that is a prelude to a dry taste, in fact we are talking about a sugar residue of 10 grams per liter!
Aware that the absolute excellence of production is in the DOCG Conegliano Valdobbiadene area, we have done all our best with these 2 products, which derive from grapes of DOC Venice area, with the aim to reach a very good quality.
For the Prosecco DOC Millesimato Brut Terre Piane Selection, 100% Glera, when the grapes are harvested, it follows the soft pressing and, once the fermentation is complete, conducted at low temperatures (16-18°), for about 15 days, the wine is placed to refine always in stainless steel tanks in contact with the fine lees, for an ideal period to achieve the best balance and fineness. Only later it is transferred into an autoclave where, added with yeast and sugars, it ferments a second time for the “prise de mousse” until it reaches the desired overpressure and the right sugar residue.
And if Glera, could be also used for a blend? From this intuition was born the Spumante Millesimato Brut “Sogno di Luna! We have added the elegance of Pinot Blanc and the delicate aromas of Muller Thurgau, to the freshness of Glera, obtaining a result with a perfect balance of taste.
